We consider a number of factors when choosing ingredients but consumer safety is first and foremost. Other factors include consumer enjoyment, quality, availability, performance, and cost.

We also consider how the ingredient will work in terms of taste, appearance and texture. We can't make a comparison based solely on cost.

Unfortunately, making changes isn't as simple as it would seem. Even minute changes can compromise the product taste and quality consumers have come to expect.
